In Korean culture, food is everything. We say βDid you eat?β instead of βHello.β My mom was the same β she cooked the most amazing meals for our family, three times a day, every single day. And one of her very best recipes was Galbi (κ°λΉ, Korean short ribs).
Now here I am, living in Seattle with my own family, slowly becoming a true K-mom like her. For me and Leoβs birthday dinner, I decided to bring back that tradition and cook Galbi at home. It turned out so delicious, and my whole family loved it. π

π₯’ What you need
- Beef short ribs β I used American Wagyu Short Ribs from Costco (so good for special dinners!) but any short rib works since the marinade does the magic.
- 1 onion
- 1 apple or Asian pear
- 15 garlic cloves
- 1 cup Mirin (or leftover Sprite/Pear juice)
- 1 cup soy sauce
- Β½ cup sugar
- 3 tbsp plum concentrate
- 2 tbsp sesame oil
- Pepper to taste
(π Hereβs a good Asian pear option online, and my favorite Mirin brand if you canβt find it locally.)

π₯’ Steps to make Galbi
- Soak the ribs in Sprite (or Coke) for 2 hours to tenderize the meat and draw out impurities.
- Rinse under running water.
- Blend onion, apple/pear, garlic, and Mirin until smooth.
- Add soy sauce, sugar, plum concentrate, sesame oil, and pepper.
- Marinate ribs in this mixture for at least 2 days in the fridge. (If you want to save some, freeze after marinating β itβs a lifesaver for busy moms!)
- Cook on skillet, stove, or grill β whatever you have.


The result? Juicy, tender, flavorful Galbi that tastes just like home. We literally finished everything in one sitting.
